Green Coconut Tarts

These Green coconut tarts are indulgent, naturally sweetened and have the goodness of hidden veggies from our Whaiora green blend 



  • 1/4 cup dates
  • 1/4 cup almonds
  • 2 tbsp desiccated coconut
  • 1 tbsp cacao powder
  • 1 tbsp coconut oil- melted
  • Pinch salt


  • 3/4 cup raw cashews (soaked 1-2 hours)
  • 1 tbsp honey
  • 3 tbsp Whaiora Green blend
  • 1/2 tsp vanilla essence
  • 1/4 cup coconut oil, melted
  • 1 pinch salt


1 tbsp desiccated coconut and fresh mint


  1. Base: Add all the base ingredients into a food processor and blend until the mixture starts to bind together. Press the mixture into 2 6cm in diameter french fluted tart tins. Press the mixture up the sides of the tart tin so the filling won’t spill out. Freeze the tart for at least one hour to firm
  2. Filling: Blend the soaked cashews, honey, Whaiora green powder, vanilla extract and salt in a food processor until creamy. Add the coconut oil and blend into the mixture on a lower setting. Spoon into the chilled tart tins and freeze for an hour.
  3. Remove from the freezer, using a knife carefully wedge out the tarts out of their molds. Top with desiccated coconut and fresh mint and serve.
  4. Store in the freezer
