Chia Pudding

Chia Pudding

Enjoy this chia pudding for breakfast, dessert or as a snack. It’s a creamy, filling, and healthy treat. Chia seeds are high in fiber and Omega-3 (Aztec warriors relied on them for energy), so this chia seed pudding will keep you going for a while!

Serves 2


  • 1 ½ cups unsweetened coconut milk or milk of your choice
  • 2 tbsp Whaiora green powder
  • a small handful of baby spinach leaves (optional)
  • 5 tbsp chia seeds
  • ½ tsp vanilla extract
  • 1 tbsp honey


Place ½ a cup of coconut milk in a blender with Whaiora powder and spinach, if using, and blitz to combine. Stir through 2 tbsp chia seeds. Distribute this mixture evenly between two serving glasses.

Place remaining cup of coconut milk, chia seeds, vanilla extract and honey in a large jar or container and mix well to combine. Pour this mixture on top of the green mixture in the serving glasses and place in the fridge overnight to set.

Serve with fresh kiwifruit, raspberries and toasted coconut flakes.
