Breakfast Muffin

Ingredients:

  • 1½ cups wheat bran
  • ¼ cup coconut oil
  • 2 tbsp honey
  • ½ cup boiling hot water
  • 2 bananas, mashed (about 1 cup)
  • 1 egg
  • ¾ cup unsweetened yoghurt
  • 1 cup wholemeal flour
  • ¼ cup Whaiora green powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup chopped walnuts (optional)
  • ¼ cup sultanas (optional)
  • ½ cup frozen blueberries (optional)

Directions:

Preheat oven to 180ºC fanbake.

In a medium bowl, combine the wheat bran, coconut oil, honey and boiling hot water and let sit for about 10 minutes while you prepare the other ingredients.

In a separate bowl combine the flour, Whairoa green powder, baking powder and baking soda.

Add the banana, egg and yoghurt to the bran mixture and stir to combine. Fold in flour mixture, walnuts and sultanas, if using.

Divide batter into greased muffin tins and sprinkle with frozen blueberries, if using. Bake until a skewer inserted into the middle comes out clean, and muffins are golden brown, about 20 minutes. Allow to cool before turning out.
